The story behind Blenheim's Mexican kitchen

A blue-water city, two passionate hospitality people, and a Marlborough town that fell in love with real Mexican flavour.

Named after Cancún

Cancun Eats takes its name from Cancún, the Mexican city of turquoise water, colour and celebration. That spirit is what we wanted to bring to High Street: a fresh, elevated take on Mexican cuisine — beloved classics sitting comfortably beside more sophisticated dishes, served in a stylish and festive room.

Chef Vijay Anthony and Amrut Redekar

Founding chef Vijay Anthony and owner Amrut Redekar built Cancun Eats around one idea: Mexican food deserves the same care as any fine kitchen. Vijay's cooking is rooted in authentic technique — slow braises, toasted chillies, hand-built sauces — with a modern sensibility in the way each plate is balanced and presented. Amrut shapes the welcome: the warm, lively, genuinely friendly service our guests keep writing about.

Cooked from scratch, grown in Marlborough

Almost everything you eat here is made in-house. Guacamole is smashed to order. Salsas are blended fresh. Our mole is simmered the long way, layer by layer. The meat and vegetables come from the best local Marlborough growers and suppliers we can find, then meet traditional Mexican flavours and techniques on the pass.

That's how we ended up with the dishes people travel across Blenheim for: mouth-watering street tacos, birria with its rich dipping consommé, golden chimichangas, quesadillas, burritos, tostadas and sizzling fajitas — plus churros and the banana chimichanga that regulars refuse to skip.

An elevated fiesta

We're a restaurant that likes a celebration. Birthdays, first birthdays, fiftieths, travellers chasing a Mexican fix, solo lunches, Friday takeaways — all of it happens here, usually with a margarita and occasionally with a surprise scoop of ice cream and a chorus of happy birthday.
