Chef Vijay Anthony brings years of skill, experience and ambition to the kitchen of Cancun Eats. At Cancun Eats it is his goal to showcase his Mexican roots and his culinary training, offering Mexican cuisine. Chef VJ story is archetypal, that of someone starting at the bottom and determinedly working his way up. Emigrating to New Zealand from India, studied Diploma in professional cookery from Western institute of technology (Taranaki).In the early 2000’s, VJ began his culinary career as a Kitchen Hand in many restaurants in Blenheim(Checkers and Secret garden)
Chef VJ’s initiative and performance were rewarded, and he gained experience in many famous New Zealand restaurant kitchens like Flying Burrito Brother’s, Tasting room, Five stags, Brentwood Hotel and Scenic Hotels under the tutelage of renowned chefs. His style, class, joy for life, and pioneering spirit continue to inspire not only every dish we serve, but your entire experience as Cancun Eats.

Amrut begins his career in the service industry in 2006 with a diploma in hotel management. He worked in different countries like India, USA, Macau, Oman and New Zealand. He followed his dream of further education and studied Level 7 Graduate Diploma in Hospitality (Toi Ohomai College Rotorua) He is our professional problem solver and all is well guy! He makes sure that Cancun Eats restaurant have what they need to operate in a smooth and consistent manner.
